Top sparkling wine from 50 yr old Chenin Blanc vines. Winemaker Jacky Blot waits until full maturity before picking the grapes, then (unlike in Champagne production) he adds zero sugar at any stage. The result is very impressive: fine mousse, citrus and stone fruit flavours but remaining steely and dry – perfect with oysters or delicate fish dishes.
